Chickpea Salad

1 tin chickpeas, rinsed
3 tsp mayonnaise (vegan)
1 carrot, finely chopped
3 green onions, chopped
1 tsp rosemary
2 tbsp fresh cilantro, roughly chopped
crushed red chili, to taste
salt & pepper to taste

  1. Roughly mash chickpeas and combine with all other ingredients.
  2. Serve and enjoy!

This can be used as a sandwich filling with lettuce similar to tuna or chicken salad or even as a part of a salad.

I love this, and we make a similar variation (I favor tarragon over rosemary) and we only use canned beans if we're desperate. It's easy to cook up chickpeas in a pressure cooker and they taste SO much better, it's amazing! This reminds me that I need to pickle some red onions... great topping on many dishes, these sandwiches included!
