I like to make this when I need to use up my overly ripe bananas. It’s quick and easy! No cranberries? You can also use chocolate chips and/or nuts instead of cranberries. Leave out the optional ingredients to make plain banana bread.
Mix ingredients in the order listed above. Just use the same fork you used to mash the bananas. Pour into a silicone loaf pan. If you dont have a silicone loaf pan be sure to grease and flour your pan. Bake in a moderate oven (350°) for 45-60 minutes. Makes one loaf.
